Skin-fermented Viognier & Savagnin
A new skinsy one for the Amato Vino line-up. Handpicked Viognier and Savagnin from Yallingup were fermented separately in amphorae for 13 days on full skins. Both were then basket-pressed to aged oak for 6 months maturation.

Such a cornucopia of delights on the aroma front – magnolia blossom, green tea, lemongrass, kaffir lime, smoky musk, Thai mint, whipped cream, cake mix, potpourri, redgum honey, baked apricot, fig & melon and flinty stonefruits. Phew. You will find the rest.
She’s creamy up front, with a long line of fruit and a lot of textural/savoury joy. Then how’s that skinsy grip on the back pallet? Serious wine. Oh, my…
