We set aside a 600kg portion of our Chenin Blanc from out Treeton way, and gave it the full skinsy treatment – wild skin-ferment in amphorae over 3 weeks, full malo, and then sealed the pots for 92 days on skins. Basket-pressed in June and settled on solids before bottling unfined & unfiltered.
Exotica. Evolving scents of lavender and woodsmoke, pear and green apple lay over a driving base of mint, clay and wildflower honey. Also musky aromas of dying flowers and minerally perfumed talc. The palate is creamy, a milky clay, with sweet lemon juice and kaffir lime flavours, beeswax honey, and briney. Pear and apple again, lime tart. Just like honey…
